Wine Pairing Menu -- Western Australia
To complement the $125 tasting menu, guests have the choice to be taken on a wine pairing journey through the southwestern wine region of Western Australia.
Cabernet Sauvignon and Semillon are the stars of Margaret River, but great wines are also being produced from Riesling, Chardonnay, Pinot Noir, Pino Gris, Sauvignon Blanc, and the more elusive Savagnin grape of the Swan Districts, Perth Hills, Pemberton, Manjimup, and the Blackwood Valley.
As a wine region, Western Australia and specifically, Margaret River, is very young but that’s not to say there are quite a few old and very respected wineries there from the very beginning who are making the wine in the style of Napa houses. This pairing is a primer from the region with pours of Cabernet, Chardonnay, Sauvignon Blanc, Riesling, and Shiraz.
The reserve pairing deepens the tasting experience to include premium pours with a greater complexity to the region, featuring more exclusive bottlings and rarer vintages. Benchmark vineyards such as Vasse Felix, Woodlands, and Cullen are some of the original wineries of the area and will be featured in the pairings.
